Anthocyanin, also known as anthocyanidin, is a water-soluble natural pigment widely found in plants in nature. It is a colored aglycone obtained by hydrolysis of anthocyanins [1]. Most of the main coloring substances in fruits, vegetables and flowers are related to it. Under the different pH values of plant cell vacuoles, anthocyanins give the petals a colorful color. There are more than 20 kinds of anthocyanins, and 6 important foods, namely geranium pigment, cyanidin, delphinidin pigment, peony pigment, morning glory pigment, and mallow pigment. Natural anthocyanins are present in the form of glycosides, called anthocyanins, and very few free anthocyanins are present.
